We make nearly everything in-house, from breads and jams to sauces and syrups, and pair it with craft coffee, fresh juices, and a playful mimosa program. Expect generous portions, seasonal specials, and a clean, sun-soaked vibe that’s equal parts lively and laid-back. Jacob Austin
Owner - Chef
Jacob Austin is the chef-owner behind The Brunch Guy. With 19+ years in professional kitchens, spanning restaurant leadership, high-volume catering, and fine dining. He has built a craveable brunch menu around scratch technique, seasonal Midwestern ingredients, and artistry. Known for detail-driven fundamentals, Jacob pairs craft with culture, training teams to deliver warm, upbeat service that turns first-time guests into regulars. He serves as Secretary of the American Culinary Federation Flint/Saginaw Chapter and has earned 50+ culinary awards over the past 15 years, including: 2014 MRLA Michigan Mentor of the Year, 2018 Michigan CTE Alumni of the Year, and the 2025 MRLA Rising Star of the Year.
Maria Austin
Co-Owner & "The Bread Gal"
Maria Austin leads the bread and pastry program at The Brunch Guy and is the founder of The Bread Gal, an artisan bakery in Old Town Saginaw. Her craft is rooted in slow fermentation, meticulous lamination, and a no-shortcuts, scratch-made philosophy. At The Brunch Guy, Maria’s work shows up everywhere, from our daily sourdoughs and brioche buns to flaky croissants, cardamom buns, buttermilk biscuits, English muffins, and seasonal desserts. She partners closely with the kitchen to develop pastries and breads that actually serve the menu. Built for texture, toast, and sauce, so every plate lands balanced. Beyond production, Maria mentors up-and-coming bakers, drives seasonal pastry drops, and ensures the pastry case is as welcoming and bright as the dining room.
